The Wine
Our Napa Valley Reserve Cabernet sauvignon is blended from superior barrels of wine from select vineyards and appellations within the renowned Napa Valley. Unlike our single-clone offerings of Cabernet, this blend brings the strengths of multiple clones together into a seamless wine that is greater than the sum of its parts. The 2021 vintage of the Reserve Cabernet is a blend of vineyards located in the St. Helena, Rutherford, Mount Veeder, Yountville, and Howell Mountain appellations.
Vinification
The grapes are hand-harvested and gently crushed to retain 60% whole berries. Color and tannin extraction is accomplished via gentle cap irrigations. The grapes were drained and pressed at dryness. The free-run and press wines were kept separate. Following fermentation, the wine went through malolactic fermentation in barrel and was then aged as independent lots. The components were aged in all French oak barrels for 20 months and racked twice to naturally clarify the wine while developing and softening the tannins. With only light filtration and no fining, the wine was laid down in bottle for about a year prior to release.
Tasting Notes
Embodied in a mesmerizing deep ruby hue, this wine commands attention
from the first glance. The nose rises to match that level of intensity with a
blend of dark fruit notes – black cherry, fig and plum take center stage while
underlying nuances of cocoa and coffee add complexity and hints of mint bring a
freshness that rounds out the bouquet. Unsurprisingly on the palate, ripe,
juicy fruit coats the tongue along with a pleasant spice note giving this
Cabernet a marvelous, lush mouth feel. The finish is a perfect balance of
acidity and tannin that will keep you coming back for more. While this bottle
can certainly be enjoyed in its youth, do not underestimate its potential – with
depth and structure it holds the promise of age ability.
